Girasole’s fix-priced, six-course truffle dinner with wine pairings by G.D. Vajra is an annual tradition for nearly two decades. It’s just one way that Girasole celebrates the strong connection between the Patierno and Vaira families. This year again, Girasole is pleased that Francesca Vaira of G.D. Vajra Winery will join them for this dinner where you’ll enjoy traditional dishes with shaved white truffles while hearing about and enjoying Vajra wine pairings.
“Every year we try to bring interesting dishes that really highlight the unique white truffle flavor,” says Chef Patierno, “but the truth is, the very best dishes are the traditional ones, such as risotto or fettuccine, because their simplicity allows one to really experience the truffles.” Chef Patierno and Francesca Vaira have created a six-course menu with white truffles from Alba and G.D. Vajra wine pairings that honor Italian tradition and highlights regional specialities.
